THE EXTRAORDINARY
Spend a romantic evening on Motu Tau Tau, under a starry sky. Local dancers will welcome you with a traditional Polynesian ceremony, to the sound of the «pu» and island songs. Once the champagne is served, the drums, songs and dances will take you on a journey through Tahitian history. Then, a sumptuous 3-course dinner will be served, accompanied by the ukulele.
ETHICS
The use of local resources is at the heart of the hotel’s ethos: it is built 90% using island materials, and tailors its menu to what is available on the island. Rather than generating large amounts of CO2 emissions by importing beef, lamb, veal or poultry that cannot be found on the island, the chef makes imaginative use of the vegetables, fruit, fish and pork found in abundance in the area. The minimum sizes of fish, lobsters and crabs are checked before purchase. Food waste is unthinkable: vegetable waste is composted, whilst other waste is exchanged with a pig farmer for 10 piglets a year.
