Fontenille Menorca – Santa Ponsa

ICONIC BALEARIC FINCA

Fontenille Menorca - Santa Ponsa, an iconic Menorcan estate, is a former 17th-century palace set in over 100 hectares of lush grounds. Rebuilt in the mid-19th century, the manor house overlooks 8 hectares of terraced gardens with lush vegetation: bushy palms, giant fig trees, exotic flowers, enchanting ponds and orange groves. Santa Ponsa is like a thousand and one nights garden in the middle of the island's arid land. Architecturally, while Menorcan elements predominate, Spanish and Moorish influences can be seen at every turn. Domes, mashrabiya and a miniature ziggurat offer a glimpse of the splendour of a princely house in past centuries. A member of the Relais & Châteaux collection, the hotel welcomes its fortunate guests to a choice of 22 rooms, suites or villas with bright decor, oscillating between immaculate white and shades of blue. Santa Ponsa is entirely dedicated to well-being. With an outdoor pool, indoor lap pool, water circuit, hammam, sauna, Nordic baths and massage rooms, the spa is the ideal place for a unique, timeless moment using natural Susanne Kaufmann products. As well-being is inextricably linked to good food, NURA, the main restaurant, offers contemporary, tangy and vibrant Spanish cuisine, focusing on local produce. In many ways, Santa Ponsa is a unique address in Menorca that is well worth more than just a detour.

THE EXTRAORDINARY

The NURA restaurant is partly supplied by a vegetable garden covering more than 5,000 square metres in the southern part of the Santa Ponsa terraces. Cultivated organically and in accordance with the principles of permaculture, it provides healthy, high-quality and seasonal produce. Naturalness, vertical gardening, local sourcing, slow food and affordable prices are the restaurant’s guiding principles. In fine weather, the restaurant’s terrace overlooks the gardens beneath the holm oaks. A delight for both the eyes and the taste buds...

ETHICS

The enhancement of landscape heritage, whether crops or gardens, is one of the major characteristics of the Domaines de Fontenille collection. A taste for fine produce, alongside a professed commitment to eco-responsibility, drove the creation of the kitchen gardens at their properties. Managed according to permaculture principles, they supply fruit and vegetables to the restaurants, ensuring a «farm to table» offering that is always tied to the seasons.
