    At The Yeatman, water is heated by solar panels, the lighting is low-energy, watering is done with rainwater, the produce served in the restaurant comes mainly from local producers, and the hotel's gardens are a refuge for rare and endangered plants. The hotel was built in harmony with the historic architecture of the wine cellar district, and the hotel has made a point of preserving some of the centuries-old trees on the site.
