ETHICS
The establishment chooses its suppliers from neighbouring small organic producers, whom it helps to develop. It has also created the Sol y Luna Foundation, which has become an important player in local development. The latter has set up an intercultural school where children from neighbouring communities have access to a wide range of education, including nutrition and foreign language learning.
