ETHICS

Here, the food hasn't suffered from the journey: it is all locally produced (apart from the lobster which comes from Brittany) and mostly organic. The vegetable garden provides herbs and tomatoes in abundance and the caviar comes from the nearby Pyrenees! An engaged partner of the European Obesity Awareness Days, the establishment has also put its CO2 emissions on a diet: high-inertia floors that keep cool in summer and avoid the need for air conditioning, electric company vehicles, promotion of bicycles to customers... The thermal waters first provide their heat to the establishment before going on to water the gardens...
